Services will be held on Monday, May 4, 2026, at Adams Funeral Home, 64 Broad Street, Woodstown, NJ 08098. A visitation will begin at 10:00 AM followed by the funeral service at 11:00 AM. Burial will follow at Lawnside Cemetery in Pilesgrove, NJ. In lieu of flowers, the family has asked that donations be made in Carol’s memory to St. Jude Children’s Research Hospital by going to www.stjude.org.

Carol Ann Simpkins, 73, of Pilesgrove, NJ, passed away peacefully surrounded by her family on April 26, 2026. Born in Mannington, NJ, she was the daughter of Jesse Coffey, Jr. and Ruth (Pierson) Coffey. Carol was a lifelong resident of Salem County and a 1970 graduate of Penns Grove High School.

Carol’s life was defined by love, laughter, and an unwavering devotion to her family. She was the beloved wife of the late Walt Simpkins, with whom she shared a lifetime of cherished memories, enduring love, and devotion. Together, they built a family that became the center of her world and her greatest pride.

Carol enjoyed birdwatching and appreciated the simple beauty in everyday life, but nothing brought her more happiness than being surrounded by her family. Her greatest joy was being “Mom-mom” to Kaylyn, Connor, and Wyatt Simpkins. Her grandchildren were truly her entire world from the moment they were born. She adored every second spent with them and filled their lives with warmth, laughter, and unforgettable memories. Whether it was her unintentional wet kisses on the ear or her constant narration of every movie she watched, those little moments became the memories her family will treasure forever.

Though words can never fully capture the impact Carol had on those around her, everyone who knew her would agree she was one of the kindest people they had ever met. Carol never had a mean bone in her body and treated everyone with warmth, compassion, and genuine love.

Carol is survived by her mother, Ruth Coffey; her daughter, Tara Simpkins; her son, Sean Simpkins and his wife, Crystal; her beloved grandchildren, Kaylyn, Connor, and Wyatt; her siblings, Linda Krough and her husband Dave, Sue Lewis and her husband Bill, and Jesse Coffey III; along with many nieces, nephews, and extended family members whom she loved dearly. She was predeceased by her father, Jesse Coffey, Jr.; her husband, Walt Simpkins; and her sister, Doris King.
